Stop eating quesadillas, it’s a caloric nuke. I see that all your daily efforts are often wasted by a single meal! Avoid eating 1500 calories in one meal, because it’s hard to eat for only 500 calories for the rest of the day.
But if you cannot stop the quesadilla or other high-fat meals, i suggest you eat them for lunch rather than dinner, this way you can burn some of the calories during the afternoon.

“Caloric Nuke” is my new favorite term :).

You’re right though, my diet the last month or so has been slowly derailing. Alot of stress from other areas of my life, particularly financial areas, has had me skirting with alot of bad eating habits again. Having used food as a coping mechanism for stress for so long, I haven’t really found another healthy substitute. It’s had me in a odd sort of limbo.

there are very few REALISTIC coping mechanisms for stress that are healthy. Exercise is supposed to be one of them.
